A few things that you might not know about me.. or you might, who knows.
(Pre-kids) I used to create meal plans for my friends in college (which is funny because I never have been one to follow a recipe). I used to experiment and throw random food together until I liked how it tasted and then I’d write it up and share with anyone interested.
This creativity with food continued after the twins were born and I cooked and prepared almost everything they ate their first year of life. I still remember making sweet potato baby food from scratch and it taking forever to get it just right. My twins hated it and threw it in my face. Haha, lesson learned.
These days, I don’t cook with “fancy” ingredients or anything with a lengthy list of ingredients- but that’s okay because this is the life stage we’re in. Simple is the name of the game. Sometimes my recipes come from a box or a jar and sometimes they are made with whole + fresh ingredients.
One thing that hasn’t changed is my love for sharing meals with others. I think it’s a love language of mine. I love sharing simple recipes that are healthy and taste good but don’t take a lot of time. To make things easy, I usually buy precut veggies or bulk cook meat in advance. I also like to do themes, for example:
Monday breakfast for dinner
Taco Tuesday
Slow Cooker/Instant Pot Wednesday
Grill out Thursday
Make your own pizza night Friday
Sometimes, we will make casseroles because those feed a lot of people and are relatively easy to make. I can’t wait to share our family favorites with you.
